Musk Melon/Cantaloupe Juice/cocktail

A very nice musk melon juice for hot summer days or nights. I have used honey instead of sugar as it is much healthier and has antioxidant properties. Honey is also known to quench thirst (perfect for summer)

Juice
Ingredients
Honey 2 tablespoons
1 large sized musk melon
Half a cup oh cream
One glass of water
Ice cubes
How to:
Chop up the musk melon into four parts. Either scoop out the flesh with a spoon or chopping it into little parts remove the skin and keep t ready. Add everything except the water and puree it together. After it gets a nice lightweight texture add the water and puree it.
Pour it into glasses and top off with a chunk of musk melon and ice cubes.

variation: To make a nice cocktail mix add tequila/vodka when pureeing it (reduce the quantity of water) i.e. 90ml of alcohol and fill the rest of the glass with water. For the alcohol do not use honey.

Light summer fruit salad

Salads are my absolute favourite. Unfortunately my dietician gives me horrible tasting ones…..
So, i decided to make a nice assortment of salads myself.
So this is the first of my creations. And i must say that i am very happy with it.
A nice chilled salad. Perfect for summer and for dieters…..
Salad

Ingredients:
Two medium sized carrots. Skin removed and grated.
One large Cucumber. Skin removed and grated.
The third one. I don’t know what this is called but where i live it is called Sweet lime. It is green on the outside, the size of an orange and yellow on the inside. I think it is called a grapefruit.
One large grapefruit. Chopped.
Plums. Seven. peeled and chopped into 8 pieces.
One tomato. Chopped into tiny pieces.
Honey.

How to:
Mix all the ingredients except the sweet lime/grapefruit. And chill for a half hour. Add the dressing. Squeeze some of the juice out of the sweet lime/grapefruit and then add the fruit. Dribble a tablespoon of honey onto the salad, cover with a plate and shake.
Serve with chilled juice or something. I decided to have it with red wine once and i loved it. I don’t remember what it was but, it was red wine full-bodied. Don’t go with my taste….try something yourself and please do comment and let me know what you like.

Whipped potatoes/Sandwich spread

This is a recipe for a variation on mashed potatoes. Instead of mashing the potatoes, i whip them. I made this up the other day when i had a few friends drop by suddenly and i had nothing in my house to serve them.
I used what i had and came up with this. It tastes nice alone and is very tasty when i spread it on sandwiches…..
And sorry about the bad picture quality, i have a horrible camera and am too broke to buy another one 🙂
My lil mean
Ingredients
1. 6 potatoes (any kind)
2. 2 onions chopped finely
3. 2 cloves of garlic
4. a little parsley chopped
5. one glass of milk/Non flavoured soy milk
6. oil to fry
7. salt to taste
8. Mustard sauce to taste
9. thai chilli sauce to taste
10. mixed herbs
Procedure:
Cook the potatoes. Instead of boiling the potatoes put them in a pressure cooker and fill it with water so that the potatoes are half submerged in water. After it is done boiling remove the potatoes and submerge them in cold water so that they can be peeled.
Fry the onions, garlic and parsley till the onions turn golden brown. Add the mixed herbs. Add the potatoes and mix for one minute and remove from heat.
add the milk. Whip the potatoes after it has cooled down a little bit. Add the sauce, mustard and salt. Mix it up and eat alone or serve with Bread as a spread.

Chilli Mustard Pasta

I made this one day when i was feeling terribly down. I had nothing to do and was bored. So, I decided to clean out my shelves. I found an old box of pasta which was going to expire in two more months. I thought that i might as well finish it off now. I looked in my fridge and found one tomato, one carrot, a clove of garlic, mustard sauce, Thai chilly sauce and half an onion.
So i decided to make up a recipe to try it out and it came out quite well. I loved it and so did mama. Therefore, i decided to share it.
It serves one as a meal and two as a snack.
Chilli Mustard Pasta
Ingredients:
A handful of Penne pasta
One Carrot (skin removed and grated)
One Tomato chopped and mashed
Half an onion chopped
One glove of garlic, crushed
Two tablespoons of mustard sauce
One tablespoon of Thai Chilli sauce
Procedure:
To boil the pasta add it to boiling hot water to which a little salt has been added. There are usually many ways of doing this but i usually wait for the pasta to rise to know if it’s been cooked.

Fry the onions in extra virgin olive oil(half spoon). Add the garlic and the carrots and continue frying for a minute, stir occasionally. Now add the tomatoes, Thai sauce and let it sit for a bit.
In the meantime, drain the pasta and pour cold water over the pasta and drain the water again. Now add the pasta to the vegetables and pour the mustard sauce. Stir for a bit, add salt and then remove it from the stove.
Serve immediately.
I had it with lemonade. It tastes lovely together.
